Festive Jollof Rice with Soul Fusion Harissa

Ingredients
- 2 cups long grain rice
- 1/4 cup Soul Fusion Harissa Blend
- 1 red bell pepper chopped
- 1 onion diced
- 2 tomatoes chopped
- 1/4 cup tomato paste
- 2 cups vegetable or chicken stock
- 1/2 cup peas
- 2 cloves garlic minced
- 1 teaspoon ginger grated
- 1 teaspoon smoked paprika
- 1/4 cup vegetable oil
- Salt and pepper to taste
- Fresh coriander for garnish
Instructions
- In a large pot, heat oil and sauté onions until translucent.
- Add garlic and ginger, cook until fragrant.
- Stir in Soul Fusion Harissa Blend, paprika, and bell pepper. Cook for 1 min.
- Add tomatoes and tomato paste, cook until soft.
- Add rice, stir to coat in spices and sauce.
- Pour in stock, bring to a boil, then reduce heat to simmer.
- Add peas, cover and cook until rice is tender.
- Add salt and pepper to taste. Garnish with coriander.
