Festive Jollof Rice with Soul Fusion Harissa

Ingredients

long grain rice

Soul Fusion Harissa Blend
1
red bell pepper
chopped
1
onion
diced
2
tomatoes
chopped
1/4
cup
tomato paste
2
cups
vegetable or chicken stock
1/2
cup
peas
2
cloves
garlic
minced
1
teaspoon
ginger
grated
1
teaspoon
smoked paprika
1/4
cup
vegetable oil
Salt and pepper to taste
Fresh coriander
for garnish
Instructions
In a large pot, heat oil and sauté onions until translucent.
Add garlic and ginger, cook until fragrant.
Stir in Soul Fusion Harissa Blend, paprika, and bell pepper. Cook for 1 min.
Add tomatoes and tomato paste, cook until soft.
Add rice, stir to coat in spices and sauce.
Pour in stock, bring to a boil, then reduce heat to simmer.
Add peas, cover and cook until rice is tender.
Add salt and pepper to taste. Garnish with coriander.
