Jollof Rice Fusion Bowl
Spice up your holidays with this bold jollof rice bowl, packed with peri-peri, peanut, and vibrant veggies for global street food flair.
Ingredients
- 3 cups cooked rice preferably day-old, cold
- 1 tablespoon tomato paste
- 1 tablespoon peri-peri sauce or Soul Fusion peri-peri blend + oil
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 cup mixed vegetables: peas carrots, bell peppers
- 1 tablespoon peanut butter
- 2 spring onions chopped
- 2 garlic cloves minced
- 1 teaspoon grated ginger
- 2 tablespoons Soul Fusion Spice Harmony Blend
- 2 tablespoons oil vegetable or sesame
- Roasted peanuts chili flakes & coriander (garnish)
Instructions
- Heat oil in a large wok or skillet over medium-high heat. Add garlic, ginger, and stir-fry for 30 seconds.
- Add mixed vegetables and stir-fry for 2-3 minutes until tender-crisp.
- Add tomato paste, peri-peri sauce, and Spice Harmony Blend, stir until aromatic.
- Add cold rice, breaking up any clumps. Stir-fry for 3-4 minutes, then add soy sauce, honey, and peanut butter. Toss to coat evenly.
- Serve hot in bowls, topped with spring onions, roasted peanuts, chili flakes, and fresh coriander.
Notes
Add leftover protein (chicken, prawns, tofu) or swap veggies to taste. Adjust heat with extra peri-peri or fresh chili.
