Add mixed vegetables and stir-fry for 2-3 minutes until tender-crisp.
Add tomato paste, peri-peri sauce, and Spice Harmony Blend, stir until aromatic.
Add cold rice, breaking up any clumps. Stir-fry for 3-4 minutes, then add soy sauce, honey, and peanut butter. Toss to coat evenly.
Serve hot in bowls, topped with spring onions, roasted peanuts, chili flakes, and fresh coriander.
